Antioxidant Activity and Anti-wrinkle Effects for Enzymatic Hydrolysates of Carrot Extracts |

Abstract |
The purpose of this study is to investigate the antioxidant activity and anti-wrinkle effects of carrot extracts prepared by enzymatic hydrolysis using in vitro model. To hydrolyze for carrot extracts, we used papain and bromelain as the enzyme. The antioxidant activity was evaluated the total contents of polyphenol and flavonoid. Additionally we measured the ABTS radical scavenging ability and superoxide dismutase(SOD)-like ability with carrot extracts prepared by enzymatic hydrolysis. And the collagenase activity inhibition was also performed to evaluate anti-wrinkle effects. We set the concentration of carrot extracts prepared by enzymatic hydrolysis as 10, 20%. The total contents of polyphenol was 16.41 mg/g(10%) and 19.06 mg/g(20%) in papain treatment group, 16.42 mg/g(10%) and 19.08 mg/g(20%) in the bromelain treatment group. In the results of total flavonoid contents, the treatment group of bromelain showed 12.34 mg/g(10%), 14.94 mg/g(20%) and 9.54 mg/g(10%), 12.17 mg/g(20%) in treated papain group. ABTS radical scavenging ability of carrot extracts prepared by enzymatic hydrolysis in high concentration was almost 100% each test group and SOD-like activities were measured and papain treatment group showed higher activity than bromelain treatment group. At all concentration of carrot extracts prepared by enzymatic hydrolysis showed the high collagenase inhibition activity over 60-80%, it means carrot extracts prepared by enzymatic hydrolysis is effective in anti-wrinkles. These results indicated that carrot extracts prepared by enzymatic hydrolysis might have antioxidant activity and anti-wrinkle effects and using enzyme as papain and bromelain can enhance these activities of carrot extract. |
