The Effect of Dietary Intake Cheonggukjang on the Skin of the Back of Hands

Abstract
In this study, a control group(Cont) and an experimental group(Exp) were administered to women in their 40s and 60s who are expected to undergo aging on the skin of the back of their hands. During the research, 10 women in an experimental group were asked to take 50g of Cheonggukjang for everyday while 10 women of a control group were not. After 12-week, the control group was not significantly different from all the measured values, but the values of the experimental group has been changed; the moisture index of the skin on the back of the hand by 18.2% (p<.01) and the oil index by 18.8% (p<.05), melanin index decreased 12.9% (p<.05), and erythema index decreased 8.3% (p<.05). The skin color of the back of the hand can be seen brightened with an increase in SCE L* value of 8.3% (p<.01) and decrease of 17% in SCE a* value indicating reducing redness in skin(p<.05), and the SCE b* value indicating yellowness of skin decreased by 14.9% (p <.05). It was also found that the fine wrinkles on the back of the hand were alleviated and the skin surface on the back of the turned out to be seemed smoother after the experiment. In conclusion, Cheonggukjang intake was effective in improving the condition of the skin on the back of the hands of women in their 40s and 60s.
